Cashew Dukkah is one of Tanya’s original varieties and continues to be very popular. Great eaten the traditional way, but also goes well in chicken dishes or used as a coating before cooking.
Dukkah originally hails from the Middle East and is a dry mix of roasted nuts, seeds and spices chopped and blended together. Traditionally dukkah is eaten by dipping fresh crusty bread into olive oil and then into the nut mixture, but it also serves as a handy seasoning in cooking and the more you experiment the more uses you will find for it.
Tanya started up Bodhi Farm Organics in 2011, after making Dukkah for dinner parties and it always being a hit. Initially she grew what she could organically in Huonville, but has since left her acreage behind. She has some contract growers that she sources ingredients from. So she sources local where possible as well as organic where possible. She produces her products in small batches in a commercial kitchen at Geeveston.
